Connage Highland Dairy is a traditional, family-run organic farmhouse cheesemaker based in the village of Ardersier in Inverness.

Their cheese is produced using milk from their organic dairy herd of 150 cows - mostly Holstein Friesian with Jersey crosses and Norwegian Reds - who graze the luscious clover pastures around the dairy and along the shores of the Moray Firth.

Their Aged Gouda is an organic waxed cheese that is sweet and milky when younger but matures into a stronger, richer flavour.

Connage Highland Dairy normally release their Gouda at around 9 months. However, The Cheese Collective has worked with them to produce a variety aged over 12 months, with the extra maturing time producing a lovely depth of flavour.
